chocolate cake!




I baked a devil's food cake for my husband's birthday and was very happy with the result!
I filled the cake with chocolate butter cream filling and iced it with dark chocolate ganache.
There is nothing better than a chocolate cake with icing! :-)

Recipe

Ingredients

For Cake
2 Eggs
210g Flour
120g Butter
4tbs Cocoa Powder or 1/2 cup Dark Chocolate
1tsp Soda bi Carbonate
1/2tsp Baking Powder
150ml Sour Cream


For Butter-cream Filling
100g Unsalted Butter
5tbs Caster Sugar
1tbs Vegetable Oil

For Chocolate Ganache
225g Dark Chocolate
75-100ml Fresh Cream

Procedure

For Cake

Sift together flour, baking powder and bi carbonate of soda with a pinch of salt.
Melt chocolate in the microwave. If using cocoa powder, make a paste with 1/2 cup water.
Cream butter and sugar till light and fluffy.
Add eggs one by one and beat the mixture well.
Now add the melted chocolate.
Add sour cream and flour mixture alternately starting and ending with the flour mixture.
Pour batter in a greased and dusted baking tin and bake in a preheated oven at 180 degrees for 30-35mins. ( see tips and tricks)
Let cool completely.
Remove the cake from the tin and cut into 3 layers. I like to use thread to cut my cakes horizontally.

For Butter-Cream Icing
Cream together the butter and sugar very well till light and fluffy.
Add the vegetable oil and beat again. The vegetable oil gives a nice glaze and texture to the icing.
Add vanilla or chocolate essence if you wish.

For Ganache
Break chocolate into small pieces and pour hot cream over it.
Mix well till all the chocolate melts and then whisk till you get a thick smooth consistency.
Refrigerate before icing

Assemble the Cake
Soak the cake layers with some rum and water if you like.
Spread the butter cream filling on the two layers.
Ice the cake with ganache.
Decorate using rosette nozzles and silver balls.
