Pear and Plum Upside Down Cake


I had some left over pears and plums in my fruit basket and wanted to make something different with them. My husband gave me some inspiration and I finally decided to make this pear and plum upside down cake with honey and light muscovado sugar. Here is the recipe....


Ingredients

flour 2 cups
light muscovado sugar 1/2 cup
caster sugar 1/2 cup
butter 1 cup
baking powder 1/2 tsp
eggs 3
plums 4
pear 2
vanilla 1 tsp
honey 1 tbsp
cinnamon powder 1/2 tsp


Procedure
1. Grease a baking tin with butter and drizzle honey all over.
2. Arrange the plums and pear to make a pretty pattern.
3. Sieve together flour, baking powder and cinnamon powder.
4. Beat butter and sugar together till light and fluffy.
5. Add eggs one by one and beat well. Add some flour in between if the mixture curdles. Add vanilla and beat well
6. Fold in the sifted flour lightly and pour over the prepared fruits.
7. Bake at 180 degrees for 25-30 mins.
8. cool slightly and take the cake out of the tin.
9. Serve with creme fraiche or ice cream and some plum sauce.
