Apple Pie

If I ever ask my husband what he wants to have for dessert, the answer always is Apple Pie! So this post is a dedication to him! This dish requires a bit of effort and needs some practice to get the pastry and the filling right. But once you master the art of making this pie, you will be in pie heaven! Add any fruit filling of your choice. Here is the recipe...

Ingredients

For Shortcrust Pastry
225g Flour
150g Unsalted Butter ( cut into cubes and chilled)
2tbs Caster Sugar (optional)
1 egg or 30 ml chilled water

For Apple Filling
5-6 Apples (Granny Smith if you can get them)
6-8tbs Brown Sugar
1tbs Cinnamon Powder
1/2 cup Raisins
Juice of 1 lemon
1tbs Flour


Procedure

For Shortcrust Pastry
Mix flour and sugar.
Add butter and rub it into the flour with your fingertips till the mixture resembles bread crumbs.
Add beaten egg little by little and bring the mixture together into a dough. Do not overmix. Do not knead.
Wrap the dough in cling film and refrigerate for 30 mins.
Divide the dough into two parts.
Roll one part and line a pie dish. This recipe is enough to line and cover a 9" pie dish.
Bake blind for 8-10mins.

For Apple Filling
Chop apples. Mix with sugar cinnamon powder, lemon juice, raisins and some water and cook till the apples become slightly soft.
Add the flour.
Let cool

Assembly

Put the filling in the previously baked pie shell.
Cover with remaining pastry. Decorate as you please.
Brush with beaten egg and bake in a preheated oven at 200 degrees for 40-45 mins.
Serve hot with vanilla icecream or creme fraiche!
