Chicken Biryani


A Biryani is one of the most loved rice dishes in our house. This is a perfect one dish meal! Nutritious and wholesome, and the vegetarian version is equally yummy! Here is my easy version of the famous dish of the Nawabs of Hyderabad!

Chicken Biryani

Ingredients

For the marinade

800g Chicken cut into pieces
1/2 cup Thich Curds
1/2 cup Ginger garlic paste ( yes, 1/2 cup!)
1tbs Chopped green chillies
2tbs Red chilly powder
2tbs Jeera powder
4tbs Dhania powder
1tbs Garam Masala powder
1tbs Chopped corriander leaves
2tbs Oil
6-8 cardamoms
1inch stick of Cinnamon
1/2 cup Fried Onions

For the Rice
11/2 cups Long Grain Rice
21/2 cups Water
1tbs Ghee
Whole Garam Masala

Saffron mixed in milk
Chopped corriander leaves
Chopped mint leaves
Chopped green chillies
Fried onions
Dry fruits
Garam masala powder
Ghee


Procedure
Marinate the chicken in the marinade (as given) for 2-3 hours
Cook the chicken in some oil till half cooked.
Cook rice with the whole garam masalas

Assembly
Place a layer of cooked rice in a transparent bowl. Pour a tbs of saffron infused milk. Sprinkle some chopped corriander, mint and green chillies and garam masala.
Now put a layer of chicken and dry fruits.
Repeat this and finish with a layer of rice. Sprinkle chopped greens, garam masala powder, fried onions and dry fruits.
Put some ghee. Be generous!
Cover with cling film and cook in a microwave for 8-10 mins. Alternately, assemble the biryani in a heavy bottom vessel. Cover. Seal with some kneaded dough and cook on 'dum' for 15 mins.
Serve hot with mirchi ka salan, raita and kuchumber.
