Citrus Chicken with Star Anise

Oranges, Lemons and Star Anise. Can you imagine the aroma that will fill your house when you cook this absolutely fabulous and aromatic dish? It is extremely easy to make, looks great and appeals to grown ups as well as kids.


The star anise gives a wonderful earthy flavour and the honey and red chilly tantalize the taste buds creating a culinary melody in the mouth!


It is a special dish for special occasions! Put some flowers on the table, light a few candles and serve this chicken with some star anise flavoured rice and good wine!



Citrus Chicken with Star Anise


Ingredients


 For the marinade
50 ml Orange Juice
25 ml Sweet Lime Juice
25 ml Lemon Juice
1tsp Orange Zest
1tsp Lemon Zest
1tsp Cumin powder
1 tsp Star Anise powder
1 tbsp Red Chilly Paste
1 tsp Chilly Flakes
1 tbs Honey
1 tsp Garlic paste
1 tsp Ginger paste
3-4 Star Anise
2-3 Spring Onions
1 tbsp Oil
Salt and Pepper to taste


2 Chicken Breasts with bone
1 tsp Cornstarch


Procedure


Mix together all the ingredients for the marinade.


Put incisions on the chicken breast with a sharp knife.


Marinate the chicken in the prepared marinade for 3-4 hours.


Cover the chicken with aluminium foil and bake in a preheated oven at 220 degrees Celsius for 10 mins.


Remove the foil and bake for another 8-10 mins.


Collect all the juices from the baking tray.


Heat the juice and reduce it a little.

Add some cornstarch to thicken it slightly.


Pour on top of the cooked chicken breasts. 


Garnish with star anise and spring onions.


Serve hot with Star anise flavoured rice.
