Vegetable Skewers with Barbecue Sauce

I bought some veges to make a healthy salad and still had some leftover cherry tomatoes and baby corn. But I wanted to do something different with these gorgeous ingredients. I also had some leftover barbecue sauce in the fridge so came up with this recipe.
This is great as finger food for parties or as a light afternoon snack. Serve this dish with some soup and toast bread and you have a healthy dinner menu ready!

Vegetable Skewers with Barbecue Sauce
Preparation Time: 10 mins
Cooking Time: 15 mins
Makes 6-8 skewers


Ingredients


1 Green Capsicum 
1 Red Capsicum
1 Yellow Capsicum
1 Onion
1 cup Cherry Tomatoes
6-8 Baby Corns
100g Cottage Cheese 
1/2 cup Barbecue Sauce (homemade or store-bought)
1 tsp Mustard paste
1/2 tsp Chilli flakes
1/2 tsp Mixed Herbs
Salt and Pepper to taste


Procedure


Cut all veges and cottage cheese into chunks.


Mix the barbecue sauce with mustard paste, mixed herbs, chilli flakes, salt and pepper.


Mix the veges, cottage cheese and sauce together and refrigerate for 1 hour.


Dip wooden skewers in water to prevent them from burning in the oven.


Now thread the marinated veges and cottage cheese on the skewers and grill in a preheated oven at 220 degrees Celsius for 8-10 mins.


Serve hot!
