Matka Kulfi

Kulfi! The Indian ice cream! This has to be the best ice cream ever! It is healthier than store bought ice creams and is extremely easy to make. It is the perfect dessert for hot summer lunches.


Cooking Time: 20 minutes
Refrigeration Time: 2-4 hours
Serves: 4

Ingredients

1 Litre Milk ( preferably full cream)
1/4th Cup Sugar
1 Tbs Cornflour dissolved in a little cold milk
Few drops of Rose Water (Gulab Jal)
1 Tsp Cardamom Powder (see Kitchen Notes! on how to make Cardamom Powder)

Procedure

Put milk in a heavy bottom pan and bring to a boil. 

Now lower the heat and reduce milk to half its volume. This will take about 20 minutes.

Add sugar and mix well to dissolve.

Now add the cornflour paste and mix well.

Let the mixture cool.

Add the rose water and cardamom powder.

Cool the mixture completely and pour into kulfi molds or earthenware pots.

Cover the earthenware pots with aluminium foil and put then in the freezer or 2 to 4 hours.

Remove from freezer and keep in refrigerator 5-10 minutes before serving.
