Apple Raisin Cinnamon Muffins

Apples and Cinnamon! A heavenly combination! There is nothing better than a warm muffin to go with your Tea or Coffee and this delicately flavoured and fragrant Apple Cinnamon Muffin is exactly what you need with a hot cup of Coffee.
These muffins are very easy to make and the same batter can be used to bake a cake and make wonderful gifts!
Here is the recipe

Preparation Time: 10 mins
Cooking Time: 25-30 mins
Makes 12 large or 18 small muffins

Ingredients
1 Cup Flour
1 Cup Brown Sugar
1/2 Cup Oil or Melted Butter
2 Eggs
2 Apples Chopped and mixed with 2 Tbsp Flour
1/2 Cup Raisins mixed with 1 Tbsp Flour
2 Tbsp Cinnamon Powder
1 Tsp Baking Powder
2 Tbsp Demerara Sugar

Method:
Beat eggs till light and fluffy.
Add sugar and continue beating till the sugar dissolves.
Add oil slowly beating all the time.
Now fold in sifted flour, baking powder and cinnamon powder.
Fold in the raisins and chopped apples.
Pour in muffin molds and decorate with few slices of apples.
Sprinkle some Demerara Sugar on top.
Bake in a preheated oven at 180 degrees for 20-25 minutes.
Serve warm with fresh cream or ice cream and hot cup of coffee.
