Mango Trifle

The Indian summer is warm, bright and sunny. It is also incomplete without mangoes. Dussheri, Langda, Kesar, Chosa, Safeda. The list is endless! But I am a Bombaywallah and can't look beyond Alphonso, lovingly called Hapus! I can eat my hapus in any form - aamras, aamrakhand, ice cream or just as slices of sweet juicy mango.


This mango trifle has all the goodness of mango coupled with the richness of custard and whipped cream. It is an easy dessert that can be fixed within 20 minutes.
Here is the recipe.

Preparation Time: 20 Minutes
Serves: 4

Ingredients
1 recipe basic vanilla sponge cake
1/2 cup mango juice
1 cup custard
2 mangoes, diced
1 cup whipped cream
2-3 biscuits

Procedure
1. Cut the cake into small pieces and place the pieces at the bottom of a deep, round, transparent dish.
2. Pour the mango juice over the cake and let the cake soak all the juice.
3. Now, pour the custard over the soaked cake and spread it evenly.
4. Next, put in the chopped mangoes. Make sure you have enough mango to make a nice thick layer.
5. Top the  mangoes with the whipped cream.
6. Crush 2-3 biscuits and sprinkle over the whipped cream.
7. Serve chilled!
