Date and Walnut Bundt



This cake is my mother’s favourite! She taught me how to make it and I love baking this cake for her.



This cake is perfect with tea or coffee and if served with ice cream, it will prove to be an irresistible finale to your dinner party!

I usually make this cake in a bundt pan as it looks very pretty while serving.

I have taken this recipe from Tarla Dalal’s The Pleasures of Vegetarian Cooking

Preparation time: 25 mins.
Cooking time: 45 mins.
Serves 6 to 8 



Ingredients


225 gms Seedless Dates

1/2 tsp B
aking Soda
1/4 tsp Baking Powder
85 gms Flour

115 gms Butter

115 gms Sugar

55 gms Chopped Walnuts

2 Eggs

1/2 tsp Vanilla Essence




Procedure


Chop dates and soak them in 2 tbsp water and baking soda for 6-8 hours.


Sift together the flour and baking powder.


Cream butter and sugar together till light and fluffy.


Add eggs one by one and beat well.


Now add the flour and baing powder mixture.


Ently fold in the dates and walnuts.


Pour into a greased and dusted baking dish and bake at 180 degrees for 30-40 mins.


Serve warm.
