My favourite part of any meal is, undoubtedly, the dessert.
I love this fruit cake and a little sprucing up with custard and fruits makes a wonderful crowd pleaser that never fails!
This dessert can be made a day or two before a big party and tastes best when served chilled.
I have used Alphonso mangoes in this recipe but you can use any seasonal fruit or a cocktail of your favourite fruits.
Instead of custard you can use sauces like chocolate sauce, strawberry sauce, butterscotch sauce or even whipped cream or ice cream!
Its a good idea to bake the cake in a ring mould or a bundt pan, like I have done, if you are making this as a dessert for a party. It looks good and gives you a lot of scope for decorating the cake.
Make lots of it because your guests will definitely ask for a second helping!
Here is my version of a non chocolate crowd pleaser!
Ingredients
Preparation Time: 30 mins
Cooking Time: 45 mins
Serves: 6-8
For the Cake
2 Cups Flour
2 tsp Baking Poder
11/2 Cups Sugar
1 Cup Unsalted Butter
3 Large Eggs
1 tsp Vanilla Extract
1 Cup Cake Fruits (chopped raisins, cashews, almonds, tuti fruti soaked in rum)
1tsp Lemon Zest
1/2 Cup Milk
For the Custard
Custard made with 1/2 litre milk using package instructions
For Decoration
45 ml Rum
1/2 cup Orange Juice
2 tbs Cocoa Powder
1 Cup chopped Alphonso Mangoes
Procedure
Separate eggs. Beat egg whites till stiff.
Sift together flour and baking powder.
Cream butter and sugar together till light and creamy.
Add egg yolks one at a time and beat well.
Add the vanilla extract and lemon zest and mix well.
Now add previously sifted flour and baking powder.
Add milk and cake fruits and beat well.
Fold in the beaten egg whites gently.
Pour batter into a greased and dusted baking dish.
Bake in a preheated oven at 180 degrees celcius for 35 to 40 mins.
Let cool
Prepare custard according to package instructions.
Assembly
Mix rum with orange juice and pour over the cooled cake.
Mix he mangoes with the custard and fill the centre of the cake with this mixture.
Pour some custard all aong the sides of the cake.
Refrigerate.
Dust some cocoa powder on the cake just before serving.
Serve chilled!
