Its been very long since i posted something on my blog...well thats because I am sailing with my husband and dont have internet access here! I am having lots of fun on board! I learnt how to make some french bread, vanilla and chocolate pudding and some doughnuts! Recipes will be uploaded soon!!!
Finally got some net connectivity here in Morocco. So here is another one of my favourite recipes!!!
Mexican Rice with Three Cheese Dumplings
Ingredients
Preparation time: 20 mins
Cooking time: 20 mins
Serves: 3-4
For the rice
2 Cups rice soaked in water
1 Cup cubed vegetables (carrot, beans, cauliflower, peas, potato)
½ Cup Spring Onions
1 Cup cooked kidney beans (rajma)
1 tsp chopped red chilly
1 tsp chopped green chilly
¼ Cup Tomato Puree
Salt and pepper to taste
1 tbsp Butter
For the dumplings
1 Cup Cottage Cheese
½ Cup Cheddar Cheese grated
¼ Cup Mozzarella Cheese grated
2 Cups Spinach (blanched)
Salt and pepper to taste
2 tbsp Butter
Procedure
Heat butter in a pan. Add spring onions and chopped vegetables and chopped chillies and sauté for 2 minutes.
Add rice and stir.
Add kidney beans and tomato puree.
Add 5 cups water (or stock) and mix well.
Bring to a boil. Simmer, cover and cook till the rice is soft.
Mix together the 3 cheeses, spinach, salt and pepper.
Shape into small balls or patties.
Heat butter in a pan and shallow fry the patties till slightly golden brown.
Assembly
Layer some rice in a glass baking dish. Place some dumplings on top and layer again with rice.
Spread grated cheese on top and bake in a preheated oven at 200 degrees Celsius for 6-8 minutes.
Serve hot
