Pineapple Upside Down Cake



Yes, I have a fascination for upside down cakes! I love them because this method of baking a cake spruces up a humble cake and converts it into a beautiful looking dessert in a jiffy. 


I like to serve this cake with Vanilla ice cream and Caramel Sauce. A traditional Pineapple Upside down cake is made with canned pineapples and glaced cherries.


 The one I made here is with pineapple and walnuts. It still tasted awesome and all 25 of us on board had two helpings each! :-)

Preparation Time: 15 minutes
Cooking Time: 40 minutes
Serves: 12


Ingredients
200g Flour
140g Sugar
115g Butter
1Tsp Baking Powder
2Eggs
1/2 tsp Vanilla Extract
5 tbspWarm Milk
1 Can Pineapples
1/2 Cup Walnuts
1/2 Cup Butter
1/2 Cup Brown Sugar


Procedure





Mix soft butter and brown sugar very well and spread all over a 9x7 inch baking tin.


Arrange the pineapple slices and walnuts to create a pretty pattern.


Cream butter ans sugar together till light and fluffy.


Add eggs one by one and beat very well.


Add vanilla and mix well.


Fold in sifted flour and baking powder alternately with milk.


Bake in a preheated oven at 205 degrees celsius for 40 minutes.


Serve warm with ice cream and caramel sauce.
