I love potatoes in any form! Baked, roasted, boiled or fried. My husband can eat endless amounts of fried potatoes and is also a loyal potato lover. So, I often try to cook potatoes in more different and innovative ways.
I made some Sesame Potatoes or Til Wale Aloo when our neighbours came over for lunch unexpectedly. The addition of Sesame powder and whole Sesame seeds gave a crisp and nutty edge to the humble fried potato. Everyone loved it so much that now I make these Sesame potatoes every week.

Serves: 4
Ingredients
4-5 Large Potatoes
2 Inch Piece of Ginger
2 Green Chillies
1 Tbsp Cumin Seeds
3 Tbsp Corriander Powder
1 Tbsp Red Chilly Powder
2 Tbsp Sesame Seed Powder
1 Tbsp White Sesame Seeds (Roasted)
½ Tsp Sugar
1 Tsp Dry Mango Powder (Amchur)
Salt to taste
2-3 Tbsp Vegetable Oil
Procedure
Peel and wash potatoes and cut them in pieces. Don’t make the pieces too small.
Finely chop ginger and green chillies.
Heat oil in a wok and add Cumin seeds.
Now add the chopped ginger and green chillies and stir for a while till the ginger turns slightly brown.
Add the potato pieces and stir on high heat till the potatoes turn golden brown.
Now add the corriander powder and red chilly powder. Mix well.
Add salt and sugar. Cover and let cook for 5-7 minutes.
Stir the potatoes gently and add the Sesame Powder. Mix well.
Add the whole Sesame seeds once the potatoes are completely cooked.
Garnish with Fresh coriander leaves and more sesame seeds.
Serve hot!
