hey ak....tried the much awaited swiss roll today.after a lot of effort i reached the 'figure of 8' stage cos i had to whip it manually.but when i added the melted butter and water it thinned out.is that supposed to happen?plus when i added the flour it wasn't a thick batter.it was pretty thin.It baked ok.but the sponge cake came out quite thin.much like a big rectangular pancake.is that how its supposed to be?
i cant wait to try it anyhow :) its in the refrigerator now.next on the list is the apple pie.love ur recipes.thanks

hi Shabnam!
i am glad to see that u tried making the swiss roll. well as far as ur queries go...manual beating just does not give the amount of aeration electric beater can give. for sponge cakes, an electric beater is a must! yes, ur batter will thin out a bit when u add the water and melted butter. after adding the flour, the batter still looks and feels like beaten eggs. it shud have a lot of air!!!
this comes with practice. give it another try. i am sure it will work out better next time! all the best!
